Elegant and easy, this is one of our go-to, cold-weather suppers.
Serves 4 / Takes less than 40 minutes
2 tablespoons olive oil
1 large leek, chopped
2 fennel bulbs, sliced
2 crisp apples, cored and sliced
Kosher salt and freshly ground black pepper
1 (12-ounce) package The New Food Collective™ Sweet Italian Sausages
3 sprigs fresh thyme
Fennel fronds, for garnish
Grainy mustard, for serving
Heat the olive oil in a large heavy skillet over moderate heat. Add the leeks and cook, stirring occasionally, until softened, about 10 minutes.
Add the fennel and apples to the skillet. Season with ½ teaspoon each salt and pepper and gently toss to combine.
Add the sausages and thyme to the skillet and cook, stirring occasionally, until everything is browned and tender and the sausages are cooked through, 15–18 minutes.
Garnish with chopped fennel fronds and serve at once with grainy mustard on the side.
